Lasagna

  • 1 lb. ground beef
  • 1/2 c. chopped onion
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. oregano
  • 1 tsp. Italian seasoning
  • 12 oz. tomato paste
  • 15 oz. crushed tomatoes
  • 10-12 lasagna noodles
  • 24 oz. cottage cheese
  • 1 1/2 c. grated mozzarella
  • 1/2-1 c. paremsan cheese
  • 8 oz. brick cream cheese

Preheat oven to 375 °. Boil lasagna noodles or soak in HOT tap water for 20 minutes. Meanwhile, brown the ground beef with the onion, adding salt, pepper, and seasonings toward the end. Add tomato past and crushed tomatoes to the meat and simmer for 15 minutes. Grease 9x13 casserole dish. Make layers as follows: Noodles, 1/2 the cottage cheese, 1/2 the cheddar, 1/2 c. of mozarella, meat sauce, parmesan, noodles, 1/2 cottage cheese, 1/2 the cheddar, 1/2 c. of mozarella, meat sauce, paremsan. Slice the cream cheese into 12 portions and spread each slice out into a rectangle. Place on top of lasagna, sprinkle remaining 1/2 c. mozzarella on top and bake for 25 minutes. Let sit for 10-15 minutes before serving.

Salad de Maison

  • Juice of 1 lemon
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 3/4 c. vegetable oil
  • 1/4 lb. bacon, cooked and diced
  • 2 heads romaine, washed and torn
  • 2 c. cherry tomatoes, halved
  • 1 c. grated Swiss cheese
  • 2/3 c. slivered, toasted almonds
  • 1/2 c. grated parmesan
  • 1 c. croutons

Make dressing by combining lemon juice, salt and pepper. Add oil in steady stream while whisking continuously. Let stand in fridge for 3 hours.

Combine other salad ingredients in bowl and toss with dressing just before serving.

Oven Fries

  • 6 baking potatoes
  • 3/4 c. vegetable oil
  • 1 1/2 tsp. salt
  • 1 1/4 tsp. pepper
  • 1 1/2 tsp. paprika

Wash potatoes. Cut each into strips or wedges, leaving skins on. Lay on baking sheet, skin side down. Combine oil, salt, pepper, and paprika. Stir well and continue stirring as you brush onto potatoes. Bake at 450 ° for 20 minutes. Broil for 3 minutes to crisp.

Fruit Dip

  • 8 oz. strawberry yogurt
  • 8 oz. Cool Whip
  • 1/2-1 container strawberry-kiwi Crystal Lite

Mix all together really well.

Pizza Dough

  • 2 1/4 tsp. yeast
  • 1 1/2 c. warm water
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 3 1/2 c. flour
  • 2 Tbsp. oil

Dissolve yeast in warm water. Add sugar and let stand for 10 minutes. Combine flour and salt in bowl. Make well in center- add oil and yeast mixture. Mix well. Knead for 10 minutes. Shape into ball. Place into a greased bowl, let rise until double. Roll out, top with sauce and favorite toppings and bake at 450° for 15-20 minutes.

Breadsticks

  • 1 Tbsp. yeast
  • 1 1/2 c. warm water
  • 1 Tbsp. malted milk
  • 1 Tbsp. honey
  • 1 tsp. salt
  • 4-4 1/2 c. flour

Dissolve yeast in water. Stir in malt, honey, and salt. Add flour, knead lightly. Divide into 12 breadsticks. Brush with melted butter. Let rise 30 minutes. Bake at 375° for 20 minutes.

Bran Muffins

6 c. All-Bran
1 quart buttermilk
2 c. boiling water

Mix and let stand to soften.

1/2 c. shortening
1/2 c. applesauce
2 1/2 c. sugar
4 eggs

Cream together and add to bran mixture, mixing well.

5 c. flour
5 tsp. baking soda
1 tsp. salt

Sift/wisk together and add to bran mixture. Bake at 350° for 12-15 minutes. Keeps in fridge for up to 6 weeks.
